This is Obaidah's recipe for a chicago style deep-dish pizza, he made it all from start to finish. Good job Obaidah <3
Dough Ingredients:
2 cups all-purpose flour
2 cups warm water
2 tbsp sugar
1 tsp salt
1 tbsp yeast
½ cup vegetable oil
3 cups all-purpose flour
extra flour for dusting
In a large bowl, measure 2 cups flour, yeast, salt and sugar, mix.
Add 2 cups warm water and whisk till smooth.
Let rest for 10 minutes.
Add 1/2 cup of oil and mix.
Add 3 cups of flour and mix.
Continue to stir in the flour with a spoon.
Then use your hands to finish incorporating in the flour.
Put the dough on a clean workspace.
Knead the dough.
Continue kneading for approx 5 minutes.
Knead until dough is smooth.
Lightly oil your bowl.
Oil the dough in the bowl.
Turn it over, pat it down.
Cover with plastic and a towel.
Leave it to rise for approx an hour, till doubled in size.
Meanwhile..... Prepare the filling.
Bottom Filling Ingredients:
1/2 lb ground beef
1/2 sliced purple onion (any onion is fine)
1/2 tomato chopped
Sliced hot peppers (amount depends on taste)
1 tablespoon Jerk seasoning
1 tablespoon paprika
1 teaspoon salt
*set aside*
1 cup of grated mozzarella cheese
1/4 cup of Parmesan cheese
Top Filling Ingredients:
1/2 cup of pizza sauce
1/2 cup mozzarella cheese
1/8 cup Parmesan cheese
Put some olive oil in a pot.
Add the onion.
Cook until soft.
Add peppers, cook and stir.
Add ground beef, cook and stir.
Add tomatoes, cook and stir.
Add spices, cook and stir.
Cook until meat is browned and vegetables are soft. Set aside to cool.
Now to prepare the crust.
Turn dough out onto a clean work surface.
Divide dough into 3 sections, 1 larger piece and 2 smaller pieces.
Reserve one of the smaller pieces, wrap it up and put in the freezer. It will make a small regular pizza another time.
Flour the work surface.
Roll out the larger piece of dough.
Roll it out so it's about 4-5 inches bigger than your 10 inch pan.
Gently place the rolled out dough over the pan.
Let it fall into the pan with the sides hanging over the edge. Trim off any excess dough.
Get the meat mixture and 1 cup of grated mozzarella cheese and approx 1/4 cup of Parmesan cheese.
Sprinkle the mozzarella cheese on the dough in the pan.
Top with the meat mixture.
Spread it out with a spatula.
Sprinkle the Parmesan cheese on top.
Now take the smaller piece of dough, put it on a floured work surface.
Roll it out, about an inch or two larger than the pan.
Pick up the dough.
Place it over the pan.
Let it sink down into the pan.
Turn in the edges.
To form a nice crust.
Put some cuts on the top of the dough and add a 1/2 cup of sauce on the top layer of dough.
Sprinkle about 1/2 cup of grated mozzarella cheese on top.
Sprinkle about an 1/8 of a cup of Parmesan cheese on top.
Preheat the oven to 375 degrees F.
Optional: chop some fresh basil.
Slice some cherry tomatoes.
Add the chopped basil to your pizza.
Add the cherry tomatoes to your pizza.
Place in the oven, cook for 40- 45 minutes. If the top starts to brown too much lay a piece of foil on top till it's done cooking. It needs this long because of the layers of dough.
Remove from oven and let sit for 10 minutes.
Remove the side of the pan.
Slide the pizza of the bottom of the pan and place on a rack.
When ready to eat.....
Cut with a serrated knife (a bread knife)
Serve while warm.

Salam! I am having a hard time finding halal Parmesan cheese. Please tell me what brand you use, and where you got it from. All the common brands (kraft, no name, generic, etc) all have animal enzymes, which are not halal. I've posted a link that can give you some more info if desired, just look under cheese.
