Spiced Squash Lentil Soup
Ingredients:
1/4 cup olive oil
  6-8 cloves of garlic
  1 large or 2 small onions, finely diced
  3 tomatoes,seeded & chopped
  2 cups of red lentils,soaked (1 hour approx)
  3-4 tablespoons of harissa (hot pepper paste)
  1 large butternut squash, (peeled & cut into 1 inch cubes)
  3 litres (12 cups) of vegetable or chicken stock
  salt to taste
